10Cr15CoMoV high-carbon stainless steel — same class as VG10, harder than most German blades, won't corrode on contact with produce.

The one knife you reach for every time. The Ichi is a full-size chef knife built on a 67-layer Damascus core of 10Cr15CoMoV steel — a high-carbon stainless alloy that delivers VG10-class sharpness retention with more corrosion resistance than carbon steel. The wave pattern on the blade isn't decorative: it's the exposed cross-section of 67 forge-welded layers, each contributing to a blade that flexes precisely and holds its edge through months of use.

Traditionally the knife of the executive chef — the Kiritsuke is a hybrid between a gyuto and a yanagiba. Its distinctive angled tip gives you precision slicing for fish and protein, while the wide heel handles vegetables with the same authority as a chef knife. One blade for the cuts that demand the most control.
The Kiri runs the same 10Cr15CoMoV Damascus core as the Ichi, housed in a blue stabilized wood handle that stands out without trying. Fewer in stock — this one is for the cook who already knows what a kiritsuke is for.
